Food waste is to emerge in a new Danish restaurant

A new Danish restaurant to serve discarded food items - that is what is
on the menu at a new restaurant that wants to focus on food waste - not
in a bad way but to put edible food being discarded into real use.
We know about stories of lots of food being thrown way from households and organisations food dealers.
But easting such food in a restaurant is not a popular issue. One does
not visit a restaurant to be greeted with discarded food materials, but
that's about to change now. In connection with the Jazz festival in
Copenhagen, a new restaurant called Eating Houses Rub & Stub has
opened its doors. This will only serve food that has been based on
excess raw materials that are donated to the restaurant. All labour for
the restaurant is made up of volunteers.
According Tore Heerup, one of the initiators of the restaurant concept, there is a clear purpose for the restaurant:
"What we want is to reduce the large food waste, which is popular in Copenhagen.
The group behind the restaurant have all witnessed the extent of food
waste on their previous jobs, such as supermarkets and restaurants.
Their project had thrown large amounts of food from which could easily
be eaten or used in cooking.
The creators of the concept stress that the restaurant does not go into
bins to look for discard food in places such as supermarkets food
containers. Instead, restaurant Rub & Stub will cooperate with,
others such as Food Bank, which already collect large amounts of raw
materials from supermarkets.
From Food Banks they receive large selection of commodities twice a
week. So it is up to the chefs and the volunteers, to determine the raw
materials that would be needed for the restaurant's dishes.
The greatest challenge lies in the composition of the raw food items.
For there can be large differences in the raw materials, the restaurant
receives.
